Oxidation and Hydrolysis A useful combination of the techniques of oxidation and pancreatic lipolysis has recently been described by Youngs ( 1961 ) as a means for the determination of glyceride composition of mixtures. The method consists of subjecting the fat to an oxidation procedure with periodate and permanganate, similar to that described by Von Rudloff (1956). Oxidative cleavage results in the formation of glycerides containing dicarboxylic acids, as in the original Hilditch oxidation, from triglycérides containing unsaturated acids.

V. Recent Investigations of Natural Fats It will be convenient at this point to consider a few of the results which have been obtained so far by the methods just discussed. Emphasis will be given to the most recent results, particularly those ap- 49 Structural Investigation of Natural Fats pearing since the last edition of Hitditch's monograph. To reduce the data to manageable proportions, the subsequent discussion will be confined (at most) to the six glyceride classes—SSS, SSU, SUS, SUU, USU and UUU—but it should be remembered that for some fats, at least, greater detail is available, and may be obtained from the original sources.
